Charred Corn Salad

Ingredients:


4 ears of corn, shucked

2 T.olive oil, plus more for finishing

1 small jalapeno finely diced (optional)

1/2 small red onion, finely diced

1 /2 red pepper, diced

1/2 cup chopped cilantro

zest and juice of 1 lime

1 T. honey

1 t. ground cumin

salt an pepper

1/2 cup crumbled feta or cotija cheese.


Directions:

Heat a grill pan until very hot. Brush the corn with olive oil and char it, turning it occasionally until the corn get deep golden brown spts, about 10 minutes or so. Let it cool just enough to handle, then cut the kernels off the cob, and put then in a large bowl.


Add the jalapeno, onion, bell pepper, cilantro, lime zest and juice, honey, cumin and salt and pepper. toss everything gently. If it needs it, add a drizzle more of olive oil. Fold the cheese into the mixture, and adjust seasoning.


Serve warm or at room temperature.
